Thankful rainy Thursday

I am thankful for the rain, even tho it is a chilly one. One thing I don't like is to be cold and wet at the same time. Brrr! So, thankful for my nice warm home and a nice hot mug of green tea sweetened with honey.

Another thing I'm thankful for is that I'm feeling better. Yeah!! Not feeling feverish, not achy. I'm moving better. I actually forget sometimes that I still do need to be careful how I move, until I move and the pain quickly reminds me. But so much better overall.

The blueberry thing-It turned out pretty good. Althougth I do have to admit I think I like pound cake better when it is fresh. Or maybe if I make it again I'll make the blueberries not quite as thick so the juices can soak into the cake.
But as you can see we liked it.



So here is what I did.
Took about 2 1/2 c. blueberries, pureed them with 2 tsp corn starch, put this along with an additional 1/2 c or more whole berries in a pan, heated them up with about 1/4 c. sugar, til thickened. let these cool.
I whipped the Dream Whip, both packs (you can use regular whipping cream or cool whip), creamed the softened cream cheese. Mixed these two togther with 1 tsp vanilla extract.
Put this in refrigerator while the blueberries cooled some more ( put them in the 'frig too).
I broke the pound cake into small pieces. Start with a layer of these and then layer with the blueberries and Dream whip/cr. cheese mixture.
Put in refrig to let set up good.
So much better the next day.

Mmmm the recipe sounds wonderful, Patty.
We have been getting rain here too for the last 3 days... it makes it feel colder outside, doesn't it?

The blueberry thingy looks goooood! I think I will just have to force myself to try it :o). We left out of there Thursday afternoon and had such a nice visit to the area! Where are you anyway? I may have passed you out and about and never knew it! I am glad you are feeling better, just remember that event though you may not be moving like Tim Conway's little old man on the Carol Burnette show, you still ain't healed all the way!
