Monday Menu Plan

well, it's actually Saturday Menu Plan but I'll start using it on Monday.

I don't know why I stress out so much about eating, cooking, grocery shopping, should I buy this, no, I can make it (then never do).
I've come to the realization that since I'm working full time now, I'm going to have to cut corners and choose all-ready-made items at times. It really will be ok!! As long as I keep the majority of the food/meals as whole and healthy as I possibly can. I keep telling myself that.
I'm coming home after a long day of work, my mind is so full of peoples names and what I've had to do with their charts, fax this, request that, file this.  It's overwhelming. Even more so when I try to figure out what I'm going to have to supper.
And then I'm ending up eating out at lunch because I dont' have any leftovers or anything prepared to take with me.

So, I've been trying to come up with a plan, going thru some old recipes, looking at menu plans online, trying to keep it simple. And trying to not stress over it!! sigh

I plan to use my crockpot as much as possible. There are some soups that I'm seeing that I can can or some other things that I can freeze.

I found some organic boneless chicken reduced and whole organic chickens on sale when I went to the store the other night. So I got several packs of chicken and one whole one. I'll be cutting the breast up and putting them together with some ingredients to go into the freezer. I can just pop these in the crockpot before I leave and add the other necessary ingredients when I get home.
I'll put the whole chicken in the crockpot today, I'm thinking either chicken noodle soup or chicken and dumplings. 

My freezer desperately needs to be cleaned out and defrosted, I need to 'shop' in there, it's mostly meats.
Also, I'll be choosing less breads, if I eat them, it will be gluten free. I tested negative for celiac but I do believe I have some gluten sensitivities.



BREAKFAST-
greek yogurt w/GF granola
apple/peanut butter sandwich (GF bread)
scrambled egg/bacon or sausage in a GF wrap w/some veggies, maybe avocado


LUNCH-
leftovers
soup
chicken/ham salad w/GF crackers or veggie sticks

SUPPER-
Honey Garlic Balsamic Chicken w/rice and steamed veggies
Pot Roast soup  using venison/grilled cheese sandwiches or a good hearty bread
leftovers
sloppy joes/fries
spaghetti/salad

Ok, we well see how this goes.

What I've been doing the past few weeks
-my grandson turned two! went to his party, that little boy is so much fun.
-had the flu shot and have not felt good since.
-On my way to work one morning I saw the most beautiful double rainbow I have seen in a long time. I stopped at the top of my driveway, then at the end of the road to take several pictures. When I got on the interstate there were several wrecks within a half mile of each other. I wondered if they had been caused from people slowing down to take pictures. And I said a little prayer of praise because if I had not stopped at my driveway, I would have been caught up in them.

I love having a good meal plan. It does help to get the meals through out the week. It is so very hard especially when you are working. Already 2 years old?? Where does the time go?? I love seeing rainbows and yes, you are probably right.......they all slowed down to fast!!
I love using the crock pot. And a menu plan is always helpful especially when you hold down a job! Lovely rainbow!
