Wednesday already?
aren't they beautiful?
Well, the week is half way over.
Dh is home from his hunting trip. He got a spike, "not too big, pretty good size". LOL!!! So anywhere in between I guess is the size of it. No pictures. One of the other guys got 2 and another got one.
He seems to have had a good time. He definitly didnt' want to get back to work today. But if he had stayed at home, he would have been outside in the yard. It is covered in leaves. I think it's kinda pretty.
our almost-dried-up creek. sad.
Haven't heard yet about his test results. Hopefully by the end of the week.
Meals so far from the freezer-
Monday-chicken stirfry and rice. (one pk chicken, one bag stirfry mix, half bag snowpeas)
Tuesday-previously frozen homemade veggie soup w/gr. beef, grilled cheese sandwiches
Today-still have a couple chix breast left so I'll make a chix/broccoli casserole, squash muffins or fritters. Usually I use canned cr. chicken soup but dont' have any soI'll make my own.
I also want to make a blueberry trifle of sorts. I'm going to have to play with the recipe.
This is what I will used
blueberries, Dream Whip, cream cheese, leftover pound cake that was put in the freezer, vanilla pudding mix.
So, I'll thicken the blueberries w/some cornstarch and sugar, make a filling out of the cr. cheese, Dr.whip, and vanilla pudding mix, maybe a little milk if it's too thick and layer it with the pound cake.
I'll let ya know how it turns out.
I'm working with what I have in the pantry also.
It's kinda fun to see what kinda things I can come up with. Another step on the journal to a more simple, frugal life.
My getting on a schedule hasn't worked this week. I've not felt well, running a lowgrade fever since Saturday for some reason. Nothing to do with my surgery, so the surgeon said but went to my reg. dr yesterday and had blood work done. Wondering if it could be my underactive thyroid, low iron, hormones?
Will know about that next week.
Praying all who read have a blessed day
